Plant-Based Chicken Udon Noodle Recipe

A delicious and simple dish packed with Asian flavours and a little spicy kick. Quick and 100% Plant-Based.

1 Pouch Seriously Sound Food Naked Pieces

400g Udon Noodles

1tbsp Soy Sauce

1tbsp Chilli Oil (plus more to serve)

1tbsp Sesame Oil (or olive oil)

1tbsp Peanuts, roughly chopped

1-2 Scallions, thinly sliced

1tsp Brown Sugar

Handful of Savoy cabbage, thinly sliced

Pinch of Szechuan Pepper (optional)

Fresh Coriander (optional)

1. Using your hands, shred the Seriously Sound plant-based chicken into smaller pieces and cook them with sesame oil (or olive oil) according to package instructions. For this step, use a large non-stick frying pan or a wok.


2. Add the savoy cabbage to the pan along with the plant-based chicken. Remove the pan from heat.


3. Add the sugar, soy sauce, and chilli oil to the plant-based chicken and mix.


4. Carefully loosen the noodles, add them to the same pan and heat through. Stir everything together. If the pan used to cook the plant-based chicken is not big enough, transfer everything to a larger one before adding the rest of the ingredients.

5. Serve warm with scallions, peanuts, a pinch of ground Szechuan pepper and fresh coriander. Optional: add more chilli oil on top. Enjoy!
