Protein Bowls with BBQ Plant-Based Chicken

These tasty bowls are packed with clean plant protein and are perfect for people trying to increase their protein as part of a healthy diet.

For the bowls:

1 Pouch of Seriously Sound Carolina BBQ

140g White Basmati Rice

200g Cooked Chickpeas

100g Cucumber, finely sliced

2tbsp Sauerkraut

2tbsp Olive Oil

2 Handfuls os Savoy cabbage, finely sliced

1 Handful of julienne carrots

Pinch of salt

Pinch of black pepper

Quick peanut butter sauce:

3tbsp Smooth peanut butter

Water

Pinch of Salt

More flavoursome peanut butter sauce:

3tbsp Smooth Peanut Butter

2tspn Soy Sauce

2tsp Olive Oil

1tsp Grated Garlic

0.5tsp Grated Ginger

0.5tsp White Wine Vinegar

0.5tsp Maple Syrup

Juice of half a lime

Water

1. Cook the rice according to package instructions.


2. Cook the plant-based chicken according to package instructions.


3. Prepare all the vegetables for the bowls.


4. For the quick peanut butter sauce: in a small bowl, combine the peanut butter and salt, then start adding water in small portions (teaspoons) until you get a drizzle consistency. Taste and add more salt if needed (if using this simple sauce, add 1 extra tablespoon of olive oil to the recipe - drizzle the oil over the entire bowl before serving).


5. For the more flavourful peanut butter sauce: in a small bowl, combine all the ingredients except for the water. Mix well and check the consistency. Start adding water in small portions (teaspoons) until you get a drizzle consistency. Taste and adjust the recipe according to your preferences.


6. Drizzle the dressing all over the bowls before serving. Enjoy!

Note: You can swap the peanut butter for tahini.
