Coconut Rice Mango Bowl with Plant-Based Chicken Recipe

These Coconut Rice and Mango Bowls with Seriously Sound Naked Pieces are the perfect healthy dinner. Refreshingly delicious and 100% Plant-Based.

1 Pouch Seriously Sound Food Naked Pieces

2tbsp Olive Oil

Coconut Rice:

140g White Basmati Rice

200ml Coconut Milk

150ml Water

Pinch of salt

Mango Salad:

200g Cucumber, finely sliced

180g Mango, chopped into small pieces

2tsp Olive Oil

2tsp Soy Sauce

1.5tsp White Wine Vinegar (or apple cider vinegar)

Pinch of black pepper

Juice of 1 lime

Pinch of cayenne pepper

A few leaves of fresh coriander and parsley

1. Combine the coconut milk and water in a small pot. Add the rice (rinsed) and bring to a boil over medium heat. Add a pinch of salt, stir to combine, cover the pot with a lid and lower the heat to the minimum setting. Cook for approx. 8 minutes, stirring occasionally to ensure the rice is not sticking to the bottom of your pot. Turn off the heat, stir and cover the pot. Allow the rice to rest for approx. 15 minutes. At this point, the rice should be cooked and sticky; there should be no liquid left. Fluff the rice with a fork before serving.


2. Cook the Seriously Sound Naked Pieces according to package instructions.


3. In a large bowl, combine the cucumber, mango, lime juice, soy sauce, vinegar, olive oil, black pepper, cayenne pepper, fresh coriander and parsley. Mix well. Taste and adjust the spices according to your preferences.


4. Allow the plant-based chicken and rice to cool down a little before serving. Assemble the bowls using the rice as the base. Add the plant-based chicken and mango salad on top. Enjoy!
