Chickpea and Plant-Based Chicken Burger

These phenomenal plant-based chicken patties are the best burgers you’ll ever have!! Mouthwateringly delicious.

For the patties:

1 Pouch of Seriously Sound Carolina BBQ

110g Cooked Chickpeas

30g Breadcrumbs

1 Small White Onion, finely sliced

1.5tbsp Tomato Puree

2.5tbsp Olive Oil

Pinch of smoked salt (or regular sea salt)

To Serve:

2 Brioche Burger Buns

A few slices of vegan cheese

A few slices of lettuce

A few slices of red onion (or pickled red onion)

Vegan Mayonnaise

Pickles

Sauerkraut

1. Use a blender or a food processor to reduce the Seriously Sound plant-based chicken and the chickpeas into small pieces, as if they were crumbled. Use the pulse button if using a blender. Transfer the plant-based chicken into a bowl. Any large pieces can be broken down a bit further using your hands or a fork.


2. In a small pan, heat 1 tablespoon of olive oil over medium heat. Add the finely chopped white onion and cook for 4-5 minutes, stirring occasionally. Add a pinch of salt and cook for 2-3 more minutes. Allow to cool down before adding to the rest of the ingredients for the patties.


3. Add all the ingredients for the patties in the bowl along with the chickpeas and plant-based chicken. Mix well.


4. Using your hands, shape the mixture into 2 patties. Allow them to rest in the fridge for at least 20 minutes (up to 8 hours) before cooking. Store them in between pieces of parchment paper.


5. Place the patties on a baking tray lined with parchment paper and brush them with a bit of olive oil on both sides. Cook the patties in the middle section of a preheated oven at 180°C for approx. 20 minutes or until piping hot and golden on both sides. If halfway through cooking the patties look too dry, brush them with a little olive oil. When fully cooked, the patties should be firm but not dry. Allow them to rest for approx. 5 minutes before serving.


6. Assemble the burgers with the ingredients listed above or your favourite ones. Enjoy!
